The concept of cooking with colors began as a way of providing my family with delicious, healthy meals. I wanted us to eat more fruits and vegetables and the easiest way I could think of was to make sure we had something red, green, blue and yellow on our plates. The recipes that follow are designed as meals not single dishes (except for desserts). And for those who are calorie conscience, I have included a nutritional breakdown.
